✨Here's a Quick & Delicious Healthy Dinner✨ This Pineapple Pico de Gallo is the perfect combination of sweet & savory. It is SO good & the best compliment to this dish😋 Ingredients: 1 salmon fillet Seasoned with: Salt Pepper Salmon rub from @Trader Joe's Pineapple Salsa: 2 slices of pineapple diced 2 Roma tomatoes chopped 1/2 red onion minced Bunch of cilantro minced 1 small jalapeño diced (optional) 2 limes juiced Salt to taste Air fried Asparagus: Bunch of asparagus Salt & pepper to taste 2 cloves of garlic minced For the Mayo based sauce: 2 tbsp avocado mayo 1/2 tbsp honey 1/4 tsp cumin 1/4 tsp paprika Pinch of salt 1/2 lime juice On the side I added 1/2 cup of white Jasmine rice. The pink sauce is totally optional but I do have to say it gives it a great flavor Notes: season both sides of the salmon filet. Cook in the air fryer at 385 degrees for 10-12 min. Once finished remove from the air fryer and cook the asparagus at 385 degrees for 5-7 min depending on how you like the texture to be. For the pineapple pico add all ingredients into a bowl and mix. For the sauce combine all ingredients together in a small bowl. Sauce makes enough for 2-3 plates. HIGH PROTEIN CINNAMON FRENCH TOAST CRUMPETS 😍 These were so good and just perfect for a high protein breakfast! Save for later☝🏼 •432 kcals •32g PRO, 57g CHO, 11g FAT Serves 1: -2 crumpets (I used five grain from @Marks and Spencer Ireland) -1 egg -15g of protein powder (I use white chocolate flavour/vanilla) -1 tsp of cinnamon -50ml of low fat milk -Oil spray -50g of 0% non fat Greek yoghurt -15g of melted chocolate spread (I use @Grenade) -5g of syrup (honey/maple/agave) -Handful of frozen raspberries -Cinnamon sugar dust or cinnamon (optional) Method: 1. Whisk the egg in a bowl. Add the protein powder and cinnamon and whisk again. Pour in the milk and mix well. 2. Dip the crumpets into the wet mixture and let them sit in it for a minute or so to soak up the liquid. Coat each side in the liquid. 3. Spray a pan with oil on medium heat, then place down the crumpets. Fry in either side for 3-4 minutes until golden brown and cooked through. 4. Serve with some spread, yoghurt, berries, syrup and cinnamon/cinnamon dust.
