Who doesn’t love chicken soup especially when it’s a rainy day or you’re feeling like you need some nurturing ❤️ We love this in our family as it is quick and easy to make and so delicious. It is like a huge hug in a bowl and something I have always made for my kids when they have a cold or are unwell. But it is yummy any day of the week.  So good!  1 x diced onion 2 x garlic cloves minced 2 x diced carrots  2 x diced celery stalks 2 x chicken breasts 2-3 x potatoes peeled, diced & parboiled 1 x litre stock (vegetable or chicken)  Fresh thyme  Salt & pepper to taste  To a large pot add a bit of olive oil and a small knob of butter and saute the onion & garlic for a few minutes. Add the carrot and celery and stir, let it soften. Add the two chicken breasts on top of the vegetables.  Pour over the stock. Add the potatoes and pop the lid on and let simmer till the chicken is cooked through.  Add the fresh thyme  Take the breasts out and shred chicken. Pop about three quarters of the chicken back into the pot and keep the rest back. Simmer for about five minutes.  If you popped the whole thyme stalks in the pot, fish out the stems.  Blitz the pot for just a few seconds with a hand held blender or give it a good mash with a masher (it makes the soup a bit thicker/creamier) but still remains chunky.  Return the remaining chicken to the pot simmer on low for a further few minutes and give it all a good stir.
