@mariannas_pantry: Dill pickle scoopable salad >>>> This is for my pickle lovers Ingredients: 1 can chickpeas 1 can white beans 1 European cucumber 2 yellow bell peppers 1/2 a red onion 1/4 cup chopped dill 1 cup diced cabbage 1 cup diced pickles 1/2 cup feta cheese Optional: 1/4 cup sunflower seeds Dressing: 1/3 cup nonfat plain Greek yogurt 2 tbsp light mayo 1 tbsp lemon juice 1/4 cup unsweetened plant milk (plus more to thin as needed) 1 tbsp ranch seasoning Instructions: 1. Finely chop all your veggies and add them to a large bowl along with beans, dill, pickles, and feta cheese. Set aside 2. Whisk together all dressing ingredients adding more milk 1 tbsp at a time until you reach desired consistency. Feel free to add more ranch seasoning according to taste preference. 3. Pour dressing over veggie mixture and toss until evenly coated. 4.
