Lentil balls (mercimek köftesi) is such a classic fresh snack in Turkey, and I think it should get more attention worldwide☺️ It is basically made out of lentils, fine bulgur, parsley, olive oil, tomato paste and spices. I can recommend serving it cold on top a lettuce leaf and of course squeezing some lemons to it🥬🍋 If you are in the Netherlands, Turkish Tale in Eindhoven is a great place to eat authentic Turkish food!
