PERSIAN RICE WITH LENTILS (adas polo) 📝YOUR INGREDIENTS RICE: 3 cups (it’s preferred that you soak the rice for an hour before cooking, but not mandatory) LENTILS: 1 cup ONION: 1 large or 2 medium ALMOND SLIVERS:  ½ cup DATES: ½ cup chopped ( you can substitute if you prefer) CUMIN & CINNAMON: about ½ to 1 teaspoon of  each SALT & PEPPER: to taste  OIL: as needed  FOR MAKING A CRUST IN THE BOTTOM OF THE PAN OIL: ¼ cup  SAFFRON: just a pinch, mixed with 1-2 tablespoons of water  (you can substitute turmeric for saffron as it gives the same color) YOGURT: ¼ cup TO POUR OVER THE RICE OIL/BUTTER: ¼ cup ( I use a mixture of ½ butter and ½ oil)  Cook lentils in salted water until soft, but not mushy. I like to add in a couple of onion stems in the water for extra flavor. Drain and set aside. Boil the rice in plenty of salted water and strain when it’s al dente, which is soft, but still firm.  NOW LET’S LAYER Add the oil, yogurt, and saffron water to the bottom of the pot, then start layering the rice, then adding the lentils. You will get 3 layers of rice and 2 layers of lentils. Make some holes to the rice with the back of a spoon handle (this helps air escape).  Drizzle the oil and/or melted butter and add a towel to the pot prior to putting the lid on. The heat should be on medium high for the first 5 minutes, then lower it to medium low. This will allow your rice to cook and form a tahdig (crusty rice) without burning.  Always stay close during the first five minutes of cooking!  In the meantime, fry your onions until caramelized, adding salt and pepper. (You can add a pinch of sugar if your onions are not caramelizing) Then fry your almonds and then the dates. I sometimes add half a tablespoon of butter to the pan at this point, as it elevates all the flavors, but that is optional.  Ten minutes before serving your dish,  add the onion-almond- date mixture to the top of your rice, allowing the steam from the rice to heat it up.
