@chefalextrim: Beignets 1 cup warm water (110f) 15 + 30g Sugar 11g instant yeast 457g AP flour 3g kosher salt 2 whole eggs (room temperature) 28g neutral oil (I use avocado) Powdered sugar for dusting -Preheat neutral oil to 350f in a Dutch oven etc. -Combine water, yeast, 15g sugar. Whisk and set aside for 8 minutes -Combine flour, salt, and the remaining sugar and whisk to combine. -Add the flour mix to the water and mix together with a wooden spoon until no flour pockets are left. -Cover with plastic wrap and place in the fridge for 1 hour until almost doubled in size. -Working on a heavily floured surface press half of the dough into a rectangle. Roll out to 8” x 11” -Cut the dough into 12 equal pieces. -Fry the dough for around 3 minutes, turning occasionally -Drain onto a rack.
