@jennnnaaayy: Chicken “Shepherds Pie” Such a yummy meal, and it’s packed full of veg & not a lot of ingredients making it super easy to make! I used the other half of the pulled chicken we cooked in the slow cooker the other day when we made pulled bbq chicken. You could easily cook some chicken as your first step, remove and add back in towards the end, or even use a bbq chook! Ingredients: 500-750g chicken 1 x brown onion diced 2 x tbspn minced garlic 1 x tbspn butter 1 x cup sliced/diced mushrooms 1 x carrot diced 2 x cups veg (I used cauliflower & broccolini) 2 x tbspn mixed herbs 2 x cups chicken gravy Salt & pepper to taste (I only added pepper) Potatoes to make your mash topping Method: Peel & boil potatoes, make mash set aside Pre-heat oven to 200 degrees Celsius In a large pan/pot cook onion with a little oil Add your garlic, cook for 1-2 minutes Add butter & mushrooms Once mushrooms start to soften, add carrots Continue to cook on medium heat Add in other veg and stir through Add in mixed herbs & pepper Pour in gravy & stir through Lid on and simmer for 5 minutes Add in chicken & stir through Prep baking dish Add chicken filling Top with mash potatoes Cook in oven for 20 minutes Optional: add cheese to top of potatoes for a little extra oomph or add Parmesan cheese to your mash! Reheats great for leftovers or meal prep also!
