This time, I made a bomb a$$ marinade for this beautiful American Wagyu tri-tip from @R-C Ranch TX Craft Meats This marinade works with any protein, including fish. I served it with a miso drizzle to take it to an even higher level of umami. This is one of those recipes you’re going to want to try. I know a beautiful tri-tip like this doesn’t really need much, but sometimes I just want to experiment with something different. 𝙈𝙞𝙨𝙤 𝙈𝙖𝙧𝙞𝙣𝙖𝙙𝙚: •4 tbsp miso paste •3 tbsp sake •3 tbsp soy sauce •1 tbsp garlic paste •1 tbsp ginger paste •4 tbsp water 𝙈𝙞𝙨𝙤 𝘿𝙧𝙞𝙯𝙯𝙡𝙚: •2 tbsp miso paste •2 tbsp soy sauce •2 tbsp rice wine vinegar •1 tbsp @Melinda’s Hot Sauce Ghost Pepper Hot Honey •1 tbsp @melindasfoods Sriracha •1 tsp sesame oil •Enough water to reach your desired consistency Instructions: 1. Add all marinade ingredients to a bowl and mix well. 2. Place the tri-tip in a vacuum bag and pour in the marinade. 3. Vacuum seal, then marinate for a minimum of 48 hours for maximum flavor. 4. When ready, remove from the bag, pat dry, and season. 5. Smoke at 225°F for about an hour, or until the internal temp reaches 120°F. 6. Sear over direct heat and remove when the internal temp reaches 130°F. 7. Add all miso drizzle ingredients to a bowl and mix. Transfer to a squeeze bottle for serving.
