Chickpeas in Thai Peanut Sauce + Kale & Brown Rice Sauce ¾ cup peanut butter, made from PB Powder 2 large cloves garlic, finely minced 3 tablespoons low sodium soy sauce or tamari 2 tablespoons maple syrup 2 tablespoons rice vinegar ½ teaspoon ground ginger 1 tablespoon lime juice 1/4 teaspoon red pepper flakes, plus more for garnish 1/4 cup warm water to thin Kale + Chickpeas 4 cups chopped & de-stemmed kale 1 tbsp olive oil ½ tsp sea salt 2 cans chickpeas, drained and rinsed Peanut Sauce 2 cups cooked brown rice, for serving 1. Add pb powder, garlic, tamari, maple syrup, vinegar, ginger, lime juice, red pepper flakes, and water to a mason jar, and shake until well combined. 2. In a large pan, heat olive oil over medium heat. Add chopped kale, and sea salt and saute until wilted, about 5 minutes. Remove from pan. 3. Using the same pan over medium heat, add chickpeas, and peanut sauce, and let simmer until warmed through and the sauce thickens, about 5 to 10 minutes. 4.
