Moussaka is a traditional Greek eggplant casserole made with baked or pan fried eggplants (aubergines) and potatoes, a rich, tomatoey beef or lamb mince sauce and topped off with a deliciously creamy bechamel sauce. In other words, the ultimate comfort food. MΩUSSΔKΔ Ingredients: 2-3 eggplants 2 -3 green zucchini 5 potatoes 1 kg beef mince 1 onion 5 garlic cloves 1 tsp pepper flakes Hand full of parsley chopped 1 tsp allspice 3 tbs tomato paste Can of crushed tomatoes  1 cup water 1 chicken bouillon cube 1 cinnamon stick 2 bay leaves  1 tsp sugar Salt and pepper to taste 1/4 cup pecorino Romano cheese grated 1/4 cup parmesan and pecorino Romano cheese mix( or just parmesan) Béchamel sauce: 100g of butter 3 tbs flour 1 lite milk 1 onion 2 bay leaves 1/2 tsp nutmeg 1 tsp white pepper Salt to taste Cut your eggplants , zucchinis and potatoes. Salt and fry them. Make sure you salt eggplants and zucchini than cover with paper towel to absorb the water it releases before frying. Meanwhile place your potatoes in some salted water prior to frying. This will keep the potatoes from browning before its time to fry.  For the meat sauce add some oil to a pan and brown off the meat. Add onions and cook for a few minutes. Than add garlic,pepper flakes, parsley, allspice and tomato paste. Cook for further few minutes than add the crushed tomatoes, water, cinnamon stick, bay leaves, and chicken bouillon, sugar and salt and pepper to taste. Mix and simmer further for about 15 minutes than add  some cheese to the meat sauce and mix through. Remember to remove the cinnamon stick and bay leaves.  For the béchamel, melt the butter and add flour. When it thickens, Gradually add your milk. Add the onions and all the spices. Simmer for about 10 minutes until thickens than remove the onions and spices. In an oven proof pan place a thin layer of meat sauce than a layer of the potatoes followed by eggplants and zucchini’s. Layer the meat sauce on top and add the cheeses. Garnish with parsley.
