(recipe below) 🍫🍦🤍 brownie layer: 2 cups (450g) unsalted butter 1 cup brown sugar 1 1/2 cups granulated sugar 1 cup (100g) unsweetened cocoa powder 1/2 teaspoon salt 2 teaspoons vanilla extract 6 large eggs 1 cup (130g) all-purpose flour 6 ounces (170g) semi-sweet chocolate 1/2 cup (90g) chocolate chips 1/2 cup (90g) chocolate chunks Flaky salt for sprinkling cream layer: 16 ounces (450g) mascarpone cheese, at room temperature 1 1/2 cups (240ml) heavy cream 1/2 cup (60g) powdered sugar (optional, adjust to taste) 2 teaspoons vanilla extract ladyfinger layer: 1 package of ladyfinger cookies (about 24 cookies) 1 cup brewed espresso, cooled 2 Tbsp sugar (optional) 1/2 cup water Cocoa powder, for dusting Preheat your oven to 350°F (175°C). Butter and line a 9x13-inch baking pan with parchment paper, leaving an overhang on the sides for easy removal. In a large saucepan, melt the unsalted butter over medium heat. Whisk together the coffee, water, and sugar. Dip the ladyfingers in the espresso mixture and add on top of the brownies. Spread the prepared cream layer over the ladyfinger layer, smoothing it out into an even layer with a spatula. Cover the baking pan with plastic wrap and refrigerate for at least 4 hours, or overnight, to allow the flavors to meld and the brownies to set.
