MEAL PREP WITH ME 🍽️ This weeks meal prep consists of Raspberry Peanut Butter Baked Oats for breakfast and some Bang Bang Chicken with Sticky Rice for lunch. Make sure to press save for your next meal prep inspo! BREAKFAST: •Raspberry Peanut Butter Baked Oats •400 kcals - 28g PRO, 42g CHO, 13g FAT Serves 2: -60g of oats -2 scoops of @myprotein vanilla protein powder -1 tsp of baking powder -1 eggs -1 banana, mashed -100ml of unsweetened almond milk -Frozen raspberries (as much as you like) -30g of peanut butter, melted -2 tsp of raspberry jam Method: 1. Mix the oats, protein, baking powder, egg, banana, 15g of the peanut butter and milk until smooth. 2. Stir in the raspberries and place into two baking dishes. 3. Add a teaspoon of jam to each dish and the rest of the peanut butter. Swirl it through the top. 4. Bake in the oven at 180 C for 20-25 mins. LUNCH: •Bang Bang Chicken & Sticky Rice •410 kcals - 42g PRO, 62g CHO, 2g FAT Serves 4: -240g of uncooked sticky rice -400g of chicken breast -1 head of broccoli -1 spring onion -Sesame seeds Bang Bang Sauce: -110g of 0% non fat Greek yoghurt -4 tbsp of sweet chilli sauce -2 tbsp of soy sauce -4 tsp of sriracha -1 tsp of vinegar Method: 1. Rinse the rice and cook according to packet instructions. 2. Boil a pot of water and cook the broccoli until soft. 3. Add the bang bang sauce ingredients to a bowl and whisk until smooth. Then add in the diced chicken breast and stir. Spray with outlet and air fry for 25 mins until cooked. 4. Divide everything evenly into 4 portions and top with the spring onion/sesame seeds.
