@thekwendyhome: You need to make this before summer and tomato season ends. It’s an upside down tomato tart. I found that using plum tomatoes work best because they aren’t as juicy. Or salt and bake your tomato slices before making this easy and delicious recipe. But if you’re lazy like me, just eat it right away before the tart gets too soggy hah! Drizzle olive oil, balsamic vinegar and sprinkle some salt on your baking tray. Place some shallots down and then start layering those gorgeous tomato slices. Tuck that all in with a sheet of puff pastry and brush an egg wash over top. Bake it at 375F for 10 minutes, flip it over and shave some parm over it before finishing it off with some fresh thyme and basil. Look how mouth watering that looks. It tastes like summer.
