Shape into 1 inch balls and place on a baking sheet lined with tin foil. I coat my hands in olive oil first. Bake for about 11 minutes at 425 degrees. I use a meat thermometer to double check they have reached 165 degrees internal temperature. Vodka Orzo: -1 tbsp olive oil -2 tbsp butter -1 shallot, diced  -6 cloves garlic, minced  -1 cup orzo -2 cups chicken broth -4 tbsp tomato paste -1/2 cup vodka -a few large dashes of red pepper flakes (or more if you like it spicier) -salt and pepper to taste -1/4 cup shredded parm -1 cup heavy cream  -salt and pepper to taste *Sauté shallot in olive oil over medium heat until softened. Add a little salt to help them sweat. Add in 1 tbsp butter + garlic and sauté for 2 more minutes until fragrant. Add orzo and brown (about 5 minutes and stir frequently so it does not burn). Create a space in your pan and add the tomato paste. Let it cook, stirring frequently, for a few minutes or until you notice it starts to turn a darker red color. You can mix it in with the orzo. Add vodka and stir in, letting it cook off. Add in chicken broth, bring to a simmer, and cover. Let simmer for about 10 minutes or until most of the liquid is absorbed. Stir in salt, pepper, heavy cream, parmesan, 1 tbsp butter, and red pepper flakes.
