@geris.kitchen: Zucchini/Courgette Fritters 3 medium courgette/zucchini 1 small red onion finley diced 1/2 cup feta cheese 1 cup all purpose flour 1-2 tbsp fresh dill chopped Salt Oil for frying Tzatziki to serve Method: 1) wash and dry your courgettes then grate into a bowl. Mix in a pinch of salt to help draw out the water and leave to sot for ten minutes. 2) thorougly squeeze out all of the waterfrom the courgettes hsing your hands or preferably use a cheese cloth and squeze tightly. Try to get as much water drianed as possible. 3) add the grated vegetable to a bowl and mix in the egg, cheese, onion dill amd flour. 4) heat planty oil in a pan and either spoon the mixture directly into the hot oil and flatten with spoon or shaoe your fritter prior to placing kn the oil. 5) fry on wach side for around 4 mins or until brown on both sodes and fully cooked. 6) trasfer to wire rack and allow them to drain for a few minutes of excess oil after frying.
