SMASHED CAULIFLOWER CHEESE 🧀 I know this isn't the traditional way to cook cauliflower cheese but I did a thing and it's actually so delicious! Think of it as a smashed version and each floret is crispy too. 🤤 There's been so many suggestions and methods of how to boil, blanch and season vegetables from my last post. I've added my recipe below but you can change things up to your preference 😊 Cauliflower florets - Pre cut ones or 1 whole cauliflower, careful cut so you have the florets still in shape, boiled for roughly 8 minutes. I ran cold water on it for a bit. Drained and left it to one side to cool. Pat dry with a paper towel before smashing. Cheese sauce - You can make your own, as long as it's not too runny. I used 500g cream cheese, 1tbsp dijon mustard, milk to loosen it up with about half a tsp each of white pepper, all purpose seasoning, paprika, garlic powder, salt to taste.  Cheese - Parmesan, mature cheddar and red Leicester. Seasoning - You can use whatever seasoning you like. In a small bowl I added 1tsp of oregano, paprika, garlic powder, all purpose, mixed herbs, black pepper. I sprinkled this on at the beginning and again at the end before cooking. Steps - Cut and boil cauliflower, cool and pat dry, sprinkle parmesan, seasoning, cheddar, add cauliflower, smash, spread cheese sauce, sprinkle more cheese, seasoning and cook! All cooked on baking paper, it gives the cheese a nice crispy finish. Cooked in the oven at 190°C for 30-40 minutes! I know this seems long but that's how long it took in my oven 🤷🏾‍♀️ cooking times may vary depending on the size of your florets and how much cheese you use so keep an eye on it while cooking.
