WELCOME TO STEWS FROM AROUND THE WORLD 🌍 A warm welcome back to stews from around the world. In season 1, we travelled all around the world from our kitchen, discovering some of the best stews the world had to offer. This is season 2 and today’s episode takes us to Thailand, where we will be making some Thai Beef Stew. This one is a real hearty and flavourful dish. Tender beef shins are stewed down in a wonderful mix of coriander roots, shiitake mushrooms, star anise, cinnamon and much more! Full recipe is below :)  (4) 500g beef shin 600ml beef stock 1 star anise 1 cinnamon stick 1 tsp coriander seeds 1 tsp black pepper corns 2 tbsp soy sauce 4 coriander stalks 3 garlic cloves 5g ginger 4g galangal 1 tbsp oyster sauce 3 shiitake mushrooms 4 coriander stalks Optional 2 tbsp cornflour (1) Start by soaking your shiitake mushrooms in some boiling water for 30 minutes. Once ready, discard the water and set aside. Now toast your whole spices for 30s on a medium high heat, then set aside 
(2) Season your beef shin with some salt. Heat up a large stew pot with some oil on a medium high heat. Once hot, add the beef and sear well on each side. Now add all the remains ingredients and bring to a boil, then reduce the heat and simmer for 2 hours. Remove the lid and taste and season with salt & pepper to taste.  (3) Remove the whole spices and simmer for a further 30 minutes uncovered. If you want to thicken it up, mix together the cornflour with 2 tbsp cold water, then add to the stew off the heat. #stew #thaifood #thailand
