DUCHESSE POTATOES 👸🏻💫SAVE the recipe👇🏼 Pommes Duchesse (or Duchess potatoes) are basically fancy mashed potatoes turned into glorious little golden swirls. They’re absolutely delicious and deceptively easy to make! They’re a perfect side to any roast dinners and can be served instead of roast potatoes.  👩🏽‍🍳To make them, you will need… 1 large bulb of garlic 3-4 large baking potatoes 45g butter, cubed and at room temp 60g freshly grated Parmesan 1/2 tsp nutmeg 3 large egg yolks  30g butter, melted,  Parsley or chives, to serve Salt & Pepper ⭐️Preheat the oven to 180C/ 160C (fan forced). Cut off the top of the garlic bulb and place in a piece of foil. Drizzle with oil and wrap it tightly before placing it in the oven with the potatoes until the potatoes are very tender, which will take 1-1.5h. ⭐️Once cool enough to handle, squeeze the confit garlic out of the bulb into a ricer along with the potato flesh. Squeeze directly into a large mixing bowl. If you don’t have a potato ricer, use a potato masher or run them through a food mill and mash until very smooth. Add the softened room temp butter, salt, pepper, nutmeg, Parmesan to the potatoes and stir until well combined. Allow the mixture to cool for a few minutes. One by one, stir in the egg yolks until they’re blended with the potatoes. ⭐️Line a large baking tray with baking paper. Transfer the potato mixture to a large piping bag fitted with a large star tip. Carefully pipe the potatoes into swirls onto the lined tray.  Space them as evenly as you can as they will rise slightly. Brush melted butter over the tops of each potato mound. Be quite gentle as the potato mounds are delicate. Bake the potatoes at 180C for 10-20 minutes or until the edges are golden brown.
