Ingredients: 3 pound freshly ground well-marbled pork butt or pre-packaged ground pork* 3 tablespoon finely minced garlic 3 tablespoon finely chopped fresh parsley 3 tablespoon red wine 3 tablespoon sweet Hungarian paprika 2 to 3 teaspoons salt 4.5 teaspoons coarsely cracked black peppercorns 3 teaspoon coarsely cracked fennel seeds 3 teaspoon onion powder 1.5 teaspoon red pepper flakes (omit if you want a mild sausage) 0.75 teaspoon dried thyme 0.75 teaspoon dried rosemary 0.75 teaspoon dried oregano 0.75 teaspoon dried ground sage Directions: Place the ground meat in a bowl and add all remaining ingredients. Use your hands or a stand mixer paddle attachment to thoroughly combine the ingredients.
