🎄ok on second thoughts, the best thing is that they’re really delicious, but you know what I mean. Nobody wants to be spending hours making a dessert on Christmas Day!  I’ve seen on here that a lot of people are  already prepping and freezing things for Christmas Day, and just generally trying to make it as stress free as possible, especially if you’re hosting for lots of guests, and that sounds like absolutely the way to go!  I love a Christmas pavlova, and these are a really cute way to serve it. Make these when you have the time this week, and simply stack with the cream and any fillings you like on the day!  You will need: (makes around 8 🎄) Meringues  - 125g egg whites - 200g caster sugar  - 1 tsp white wine vinegar  - 1 tsp vanilla extract  - Green food colouring  - Small sprinkles (optional)  Fillings - 300ml double cream  - 60g icing sugar  - 1 tsp vanilla extract  - 100g caramel  - Handful of raspberries  - Larger sprinkles  1. whisk the egg white until foamy, add the vinegar and whisk to stiff peaks  2. Add the sugar a spoonful at a time, and keep whisking until the meringue has thick and glossy stiff peaks, then add in the food colouring.  3. Draw 8 and 6 cm circles on to some parchment paper to help guide your piping. This will make around 8 sets of trees.  4. Pipe with a star nozzle to create your sets of branches, as well as a final dollop with a point for the tops of the streets, and for the 2 large pieces, scoop out a well in the middle to leave space for the cream and fillings.  5. Bake for 1 hour 15 mins at 110°C then turn the oven off and let them cool fully before taking out to avoid cracking.  6. When ready to serve, whisk the cream with the icing sugar and vanilla, and stack with the meringue, caramel and berries.  7.
