Homemade ice cream summer continues and this week we are making something really special. 🍪🍦 Homemade ice cream sandwiches! It's simple, creamy, vanilla ice cream sandwiched between two soft chocolate cookies and made entirely from scratch. The kind that actually melts because it's made with real ingredients and not a list of stabilizers and chemicals that have no business being in your dessert. (If you have never noticed that store bought ice cream sandwiches don't melt, now you know😳) These bring back every good summer memory and taste so much better than anything from the freezer section and when your kids bite into one you made yourself, that feeling is just unmatched. 🙌🏼💛 Once you make these there is truly no going back to the store bought version. Ever. Ice Cream Sandwiches Makes: 12-16 | Total Time: 9-10 hours Ingredients Chocolate Cookie: * ¾ cup salted butter, softened * ¾ cup granulated sugar * ¼ cup brown sugar, packed * 1 large egg * 1 tsp vanilla * 1¾ cups all-purpose flour * ½ cup unsweetened cocoa powder * 1 tsp baking powder Homemade Vanilla Ice Cream: * 2 cups heavy cream * 1 cup whole milk * ¾ cup brown sugar * 2 tsp vanilla extract * ¼ tsp kosher salt Directions For the Ice Cream (Make First — Needs Time to Freeze) 1. In a medium bowl, whisk together all of your ingredients until smooth and sugars are dissolved. 2. Cover and refrigerate for 3 hours (or overnight) until well chilled. 3. Attach frozen KitchenAid ice cream bowl and dasher. Set mixer to Stir (Speed 1) and pour mixture in while running. 4. Churn for 15-20 minutes, until thick and creamy. 5. Line a 9x9 baking pan with parchment paper, leaving overhang on the sides. Pour churned ice cream in and spread into an even layer. Place a second sheet of parchment directly on the surface of the ice cream. 6. Freeze for at least 4 hours, or until completely firm. For the Chocolate Cookies 1. Preheat oven to 350°F. Line baking sheets with parchment paper. 2. Cream butter and both sugars until light and fluffy, then add egg and vanilla and mix until combined. 3. In a separate bowl, whisk together flour, cocoa powder, and baking powder. 4. Add dry ingredients to wet and mix until just combined. 5. Divide dough in half. Working with one half at a time, place dough between two sheets of parchment paper and roll to about ¼-inch thick. 6. Slide the rolled dough still sandwiched between the parchment, onto a flat baking sheet. Repeat with the second half. Refrigerate both sheets for 30 minutes until firm. 7. Remove from fridge and cut into rectangles (about 3x2 inches) using a knife or pizza cutter. Re-roll any scraps, chill briefly, and cut again. 8. Transfer rectangles to prepared baking sheets and bake 8-10 minutes until edges are set. Cool completely on a wire rack before assembling. To Assemble: 1. Cut the frozen ice cream into rectangles that match your cookie size using a sharp knife. 2. Working quickly, place one ice cream rectangle on the flat side of one cookie. Top with second cookie, flat side down, and gently press together. 3. Immediately wrap individually in plastic wrap or parchment paper.
