M’gatta’a (مقطعه) A dish that has many variations across the levant and this is the jordanian version of it. Ingredients: - 2 cups of flour - 1/2 or 3/4 cup water - 3 onions - 1 cup of brown lentils - 500 grams full fat yogurt - big bunch of chopped parsley - olive oil @ndcmuscat - salt - start by making the dough by mixing the flour with water. Add the water gradually while kneading in order to get a smooth but tough dough. Then let it rest till everything else is prepared. - boil the lentils with a pinch of salt for about 10 minutes. - finely dice the onions then sauté them in a drizzle of olive oil till their aroma fills the kitchen. - roll the dough into a rectangle and sprinkle some flour on it. Roll it on itself and cut it into strips. - boil the yogurt in a large pot while whisking continuously so it doesn’t split. If it does. Just blitz it with an immersion blender. - add 3 cups of water and get to a boil once again. Then add the pasta. Lentils and the onions with the parsley. Give it a gentle stir and let the pot simmer for about 5 minutes. If the sauce gets too thick thin it with water. - serve it piping hot with a drizzle of olive oil. A sprinkle of parsley and any garnish you like. I recommend chopped chili and enjoy.
