@brendanpang: HOT AND SOUR SOUP 🔥🥣 A cozy, delicious bowl that’s sure to warm you up this winter.   - 2 tbsp vegetable oil - ½ tbsp chilli flakes - 2 tomatoes, chopped - 1.5L veg or chicken stock - 1 ½ tsp sugar - 2 tsp white pepper - 2 tbsp light soy sauce - ½ tbsp dark soy - 1 tsp sesame oil - 2 cups of mushrooms (I’ve used enoki and shiitake) - 1/4 cup dried black fungus, rehydrated, sliced - 1/4 cup bamboo shoots - ½ block firm tofu, chopped - 1 cup white vinegar - Cornstarch slurry (1/4 cup cornstarch + 1/3 cup water) - 1 large egg, whisked - Spring onion, chopped, to serve Heat oil in a pot over medium heat and add the chilli flakes. Stir and let sizzle for 30 seconds before adding in the tomato. Cook for 2 - 3 minutes then add in the veg stock. Bring to a simmer and add sugar, white pepper, light soy sauce, dark soy sauce and sesame oil, stirring well to combine. Let cook for about 2 - 3 minutes before adding in your mushrooms, black fungus, bamboo shoots and tofu. Cook for 5 minutes then add in the vinegar. To thicken the soup, stir gently whilst pouring in the cornstarch slurry. Lastly, gently stir in the egg to form ribbons.
