I tell my customers to do this!!(Cheesemonger too) and they don't believe me!! so many tell me they just throw the rind away😭 it has so many uses

Wish I could buy just the rind. It’s my favorite part. I’d have to make this as soon as I bought a wedge or else the rind wouldn’t last lol. But it does look amazing.

parmesan rinds are also great to simmer in pasta sauce or risotto to get a deep parmesan flavor!
