Strawberry white chocolate chip muffins✨🍓                                                      Recipe:                                                                     Ingredients                                                        Strawberry Jam -1 1/4 cup strawberries (fresh or frozen) (209g) -1/4 cup granulated sugar (50g) -2 tsp lemon juice -1/2 Tbsp cornstarch + 1 Tbsp water Crumble -1/2 cup granulated sugar (100g) -3/4 cup all-purpose flour (90g) -6 Tbsp unsalted butter, cold and diced (85g) -pinch of salt Muffins -2 1/2 cups all-purpose flour (325g) + 2 tsp for strawberries (5g) -1 Tbsp baking powder -1/2 tsp salt -1/2 cup unsalted butter, softened (113g) -1 cup granulated sugar (198g) -2 eggs, room temperature  -2 tsp vanilla -1 Tbsp lemon zest  -2/3 cup milk, room temperature (158ml) -1 1/2 cups diced strawberries (about the size of a blueberry) (250g)  -3/4 cup white chocolate chips (128g) Instructions  For the strawberry jam: 1. Combine 1 Tbsp of water and 1/2 Tbsp cornstarch in a small dish and set aside.  2. In a medium saucepan bring sugar, strawberries, and lemon juice to a boil. Reduce heat and simmer for about 10 minutes, stirring occasionally. Smash the strawberries. 3. Add water+starch mixture and mix to combine. Turn off heat and set aside to cool. For the crumble:  1. Stir together 3/4 cup flour, 1/2 cup sugar, and a pinch of salt.  2. Add 6 tablespoons of cold unsalted butter diced into cubes and work the butter into the flour mixture with your fingers until a crumbly mixture has formed. Set aside. Place in the refrigerator meanwhile. For the muffins: 1. Preheat oven to 425°F and line a muffin tin. 2. In a medium bowl whisk together flour, baking powder, and salt. Set aside. 3. In a large bowl beat the butter and sugar until light and fluffy. 4. Add the eggs, lemon zest, and vanilla. Mix until combined. 5. Add the dry ingredients to the creamed mixture alternately with the milk. Mix until just combined. 6. In a small bowl gently toss the diced strawberries with 2 tsp of flour.  7. Add the strawberries and white chocolate chips to the batter. Gently fold into the batter until just combined. 8. Scoop the batter into muffin liners, add some strawberry jam on top, and sprinkle some crumble. 9. For regular sized muffins bake for 5 minutes at 425°F and then reduce temperature to 350°F for about 15-18 minutes.
