Classic Mini Pavlovas Crispy crust on outside, soft, airy and marshmallowy inside.  🔘Ingredients: 6 egg whites at room temperature  150g powdered sugar   150g granulated sugar  2tbsp corn starch   1 tsp lemon juice   A pinch of salt Vanilla extract  🔘For cream:  200g mascarpone   150g heavy whipping cream(33%)   25g powdered sugar 🔘Prep and Baking: Preheat the oven to 225F.  Beat egg whites with a pinch of salt.  When foam appears, add powdered sugar with starch in small portions and continue beating, add also granulated sugar in small portions. After that add lemon juice and vanilla extract and fold quickly with spatula. Whisk until stiff peaks.  It will be glossy and smooth.  Line the baking sheet with parchment paper or even better with a non-stick mat(if you have it),now pipe meringue into wide nests like on the video onto the parchment paper. Bake your Pavlovas at 225F/107C for an 1 hour and 30 minutes, when the time is up turn off the oven and leave your meringues inside without opening the door, to let meringues in the hot oven for another 30 minutes.  After that transfer your pavlova onto the cooling rack with parchment paper to allow it to cool down to room temp.  Meanwhile, prepare the cream.   Add mascarpone, icing sugar and whipping cream and beat for 6-7 minutes, gradually increasing the mixer speed until the cream thickens. Once your pavlovas are cooled, start by piping with cream first, then add fruits and fill with more cream( makes more delicate in my opinion).  Decorate with any berries or fruits of your choice.
