@kebohlman: Tomato basil soup & grilled cheese🤌🏼 Ingredients: * 4 Cups tomatoes (I used flavor bombs & Roma) * 1 large onion, quartered * 1-2 shallots, quartered * Two whole heads of garlic with the tops cut off * 1-2 cups vegetable broth * Olive oil * Salt * Pepper * 1 Cup basil Directions: * Preheat oven to 350 degrees * Add tomatoes, onion, shallots, and garlic to a large pan * Cover with olive oil, adding a little extra to the heads of garlic * Add salt & pepper * Bake until tomatoes blister and onions are soft, about 40 minutes * Remove from oven and take garlic heads out, set aside * Add tomato contents to a blender or a large pot with immersion blender * Squeeze garlic out of wrapping into blender or pot * Blend until desired consistency, adding broth to thin out if needed * Add basil and blend again * Warm on stove if needed, and serve with grilled cheese ◡̈ #tomatobasilsoup #soupseason #grilledcheese #fallrecipes
