Rib Eye steak with Chimichurri Ingredients: Steak: 1 Ribeye Steak - 500g 3 cloves garlic 4-5 sprigs of thyme  50g Butter Fine salt Chimichurri: 1/2 cup olive oil 2 tbsp red wine vinegar 1/2 cup finely chopped parsley 3-4 cloves garlic , finely chopped or minced 2 small red chilies finely chopped 2 tbsp of fresh oregano or 1 tbsp of dried oregano 1 level tsp sea salt flakes 1/2 tsp pepper Dust your steak with fine salt, put it in the fridge on a racked tray anywhere from 40 minutes to 24 hours. The longer the time the more intense the flavour will be and it should give you a better crust on the steak when cooking Add all your chimichurri ingredients to a bowl, stir and leave to one side Remove your steak from the fridge 1 hour to 40 minutes before cooking Cook your steak on a high heat in olive oil on all sides, making sure you develop a crust all over Turn the heat down slightly and add butter, garlic and thyme to the pan whilst constantly basting the steak, flip and do the same on the other side for a minute. Place the garlic and thyme on top of the steak and add to the oven at 200C (if your pan isn’t oven safe then transfer to an oven tray along with the juices) I used a temperature probe to cook to my liking (medium rare) which took about 7-8 minutes. If you haven’t got a probe then try the touch test method (just google it) Once cooked, rest for 5-10 minutes.
