Milk Potato and Chicken Curry Ingredients: 3 large potatoes Salt (to taste) A handful of curry leaves 1 can (400 ml) of coconut milk 2 tablespoons oil (divided) 1 teaspoon mustard seeds 3-4 dried red chilies 1 large onion, finely chopped 1 tablespoon ginger-garlic paste 1 teaspoon turmeric powder (divided) 500 grams chicken, cut into pieces 1 teaspoon chili powder 1 tablespoon chicken masala 1 teaspoon coriander powder 1 teaspoon garam masala Instructions: Prepare the Potatoes: Boil the potatoes until they are tender. Once done, peel and mash them. Add salt, curry leaves, and half of the coconut milk to the mashed potatoes. Mix well and set aside. Temper the Potatoes: In a pan, heat 1 tablespoon of oil. Add mustard seeds, dried red chilies, and a few curry leaves. Once they start to splutter, add this tempering to the mashed potato mixture and mix well. Cook the Chicken: In another pan, heat the remaining 1 tablespoon of oil. Add the chopped onions and sauté until they turn golden brown. Add the ginger-garlic paste and sauté for another minute. Add 1/2 teaspoon of turmeric powder and mix well. Add the marinated chicken (marinate the chicken with 1/2 teaspoon turmeric powder, chili powder, chicken masala, coriander powder, garam masala, and salt) to the pan. Cook the chicken until it is well browned and cooked through. Combine and Finish: Once the chicken is cooked, add the remaining coconut milk to the pan. Mix well and let it simmer for a few minutes until the flavors meld together. Serve: Serve the milk potato mixture alongside the chicken curry. Garnish with fresh curry leaves if desired.
