TUNA CUCUMBER BOATS 🔥 If you missed meal prep, or you want to pull something together in no time that packs a ton of protein, try making this easy spicy tuna salad. It packs 51g protein and just 500 calories. I scooped it over a hollowed out English cucumber, but you can use lettuce, bell pepper, sourdough, or any type of vessel you wish! Toss them in with the tuna. 3.Boil 2 medium eggs for 7 minutes and 20 seconds. Drop them into an ice bath, peel, dice, and add to the bowl for that extra protein boost. 4.Dress it up: Stir in 1 tbsp Dijon mustard, 1.5 tbsp mayo, 1 tbsp sriracha or hot sauce, and a pinch of salt and pepper. Mash everything together with a fork until well combined. 5.Scoop out the insides of an English cucumber and stuff it with the tuna mix. 6.Finish with 1 tsp sesame seeds and a drizzle of chipotle hot sauce on top.
