@_jenperezz: Tiramisu cookies🍪☕️🍫 Recipe: Ingredients Cookies -2 1/4 cups all-purpose flour (270g) -1/2 tsp baking soda -1/2 tsp baking powder -1 Tbsp instant espresso powder -1/2 tsp salt -10 Tbsp unsalted butter, softened (141g) -1/2 cup granulated sugar (100g) -1/2 cup light brown sugar (107g) -1 egg + 1 egg yolk, room temperature -1 1/2 tsp vanilla Mascarpone frosting -8oz mascarpone cheese, cold -2/3 cup heavy whipping cream, cold (158ml) -1 cup powdered sugar (113g) -1 tsp vanilla -Cocoa powder for dusting Instructions For the cookies: 1. Preheat oven to 350°F and line baking sheets. 2. In a medium bowl whisk together flour, baking soda, baking powder, espresso powder, and salt. Set aside. 3. To a large bowl add butter, granulated sugar, and light brown sugar. Beat until light and fluffy. 4. Add egg, egg yolk, and vanilla. Mix until combined. 5. Slowly mix in the dry ingredients until just combined. 6. Scoop the dough with a 3 Tbsp cookie scooper and place on a lined baking sheet. 7. Bake 350°F for 9-11 minutes. Let the cookies cool before frosting. For the frosting: 1. In a large bowl beat the heavy whipping cream, mascarpone cheese, powdered sugar, and vanilla until stiff peaks form. 2. Add frosting to a piping bag. You can just cut off the tip of the piping bag or use a piping tip (such as a Wilton 2A) and pipe a swirl on top of the cooled cookies. 3. I made this for my moms birthday andmy family loved it! we could barely eat one because they are VERY filling but it's heaven! Fluffy cream, soft, gooey cookie, slightly bitter cocoa powder, perfect!
