Eggplant Fatteh 🇱🇧 فتة باذنجان Crispy pita, warm chickpeas, roasted eggplant and spiced beef under a garlicky yogurt-tahini sauce. One of the recipes my mom never wrote down — so I did. Ingredients: 1 large eggplant (or 2 medium) · 3 small pita · 1 can (19 oz) chickpeas · ½ lb beef, finely diced · 1 tsp seven spices · 1½ cups plain yogurt · 2 tsp tahini · 2 garlic cloves, minced · 3 tbsp pine nuts · 1 tbsp ghee · neutral oil, salt, black pepper, parsley Method: Cube the eggplant, toss with 2 tbsp oil + ½ tsp salt, air fry until golden. Cut the pita, toss with 2 tbsp oil, crisp it up. Warm the chickpeas. Sear the beef in 1 tbsp oil with the seven spices, ½ tsp salt + ¼ tsp black pepper. Whisk yogurt, tahini, garlic, 1 tsp salt + ¼ cup cold water. Toast the pine nuts in ghee. Layer: pita → chickpeas → eggplant → beef → yogurt sauce → pine nuts + parsley.
