How to make a cheesy cauliflower gratin that is perfect as a holiday side! #AthenosPartner  Everyone needs a vegetable side during the holidays, and bonus points if it is cheesy! I used @athenosfeta Crumbled Feta for a fun twist on this classic.  Ingredients: 1. 1 large head of cauliflower, cut into florets 2. Salt and pepper to taste 3. 4 tbsp butter 4. 4 tbsp AP or gluten free flour 5. 3 cups whole milk 6. 1 cup plus 2 tbsp @Athenos Crumbled Feta,  7. ¼ panko bread crumbs, traditional or gluten free. Instructions: 1. Preheat the oven to 400°F. 2. Bring a pot of water up to a boil and add 1 tbsp of salt. Add the cauliflower florets and boil for 3-6 minutes, until they are fork tender but still al dente. Drain the cauliflower and set aside to dry. 3. In a pot over medium heat, add 4 tbsp of butter. Once the butter is melted and bubbling, add the flour and stir for another 3-4 minutes to create the roux, making sure to break up any lumps that form with the flour. It will look like a paste, this is what we are going for! 4. While whisking slowly pour in the milk, making sure to whisk continuously to avoid lumps from forming. Whisk until all milk is combined and it is smooth. Bring up to a simmer and simmer for 10 minutes to thicken. Add 1 tsp of salt and ½ tsp pepper. 5. Turn the thickened milk off the heat. Stir in the feta cheese and whisk to combine. 6. Add the cauliflower to a baking dish and pour the sauce over the cauliflower. Sprinkle with a feta cheese and bread crumbs on top. Transfer to the oven and bake for 25-30 minutes until the top is browned. 7. Remove from the oven and cool for 10 minutes before serving. Enjoy!
