@mishkamakesfood: Smoked Corn Sald I drop one of these super simple, healthy, prep-able marinated salad recipes every single week and this week’s is an Elote/Esquites inspired one bulked up with some extra veggies and white beans for a lil protein boost. Creamy, smokey, citrusy, and totally crushable. You may wanna make a double batch of this one folks. Catch you next Friday for the next marinated salad drop 🫡 ►Charred Corn Salad: Corn : 1 bag frozen or 1.5 cans, optionally charred (you could totally use fresh too) White beans: 1 can, (I like navy or great northern) Red Bell Pepper: 1/2 to 1 pepper, diced Red onion: 1/4 diced Cherry Tomato - 10-12 diced Scallion, greens only: 4 stalks piece sliced Cilantro: 1/2 bunch (use your judgement) 1/4 cup cojita cheese (add more or less to your preference) Additional Chili Flakes: to taste, optional Add dressing to taste, you may end up with extra Salt & additional lime juice to taste at end after adding dressing. ►Smoky Dressing 1/4 cup mayo or greek yogurt
Juice from 2 limes
Smoked Paprika 1 tbsp Chili Flakes 1 tbsp
Salt 3 finger pinch 2 minced garlic cloves 1 tbsp of water to thin if needed 
This dressing recipe is adapted from an @seriouseats article. Optionally char your corn with your broiler or a blowtorch, then add together all ingredients from the “charred corn salad” list. Make your dressing, then slowly add into salad until dressed to your liking.
