@brunchwithbabs: 🍋🟩Mojito Jello Shots 🍋🟩They are as adorable to serve as they are to enjoy. So refreshing and yummy! 1 cup water 1 cup sugar 3 envelopes gelatin ¾ cup fresh lime juice Fresh mint 1 cup white rum Cut the limes pole to pole. Juice limes to provide ¾ cups juice. Hollow out each lime. A small pairing knife or kitchen sheers can help to remove the entire inside of the lime. In a pot, combine the water and sugar over medium heat and stir until the sugar dissolves. Remove from heat and stir in the gelatin. Add the lime juice and 2 mint stems with leaves. Steep for 12-15 minutes. Remove the mint stems after 15 minutes and stir in the rum. Fill each lime shell with the mojito mixture. Place in the refrigerator and allow to set for at least 3 hours. To serve, cut each lime in half and sprinkle with chopped fresh mint. Babs Tip: In the video I put the mint in before refrigerating but I found it’s better to just add the chopped fresh mint at the end. #summertreat
