I don’t get enough protein every day, so I decided to make my favorite food in snack form (bite-sized meatballs) These turkey meatballs have 6.5 grams of protein per ball, only 3 grams of fat and just over 1 gram of carbs. Combined with a high protein tzatziki, a few of these balls makes a delicious high-protein snack. I even eat them cold straight out of the refrigerator 😂 I tripled the below recipe so I could have a huge batch for the week: 1.5 cups spinach 1 lb lean ground turkey 1/3 cup breadcrumbs 1 egg 1/3 cup crumbled feta 1 tbsp minced garlic 1/3 cup part-skim shredded mozzarella Salt & pepper 2 tbsp fresh parsley, chopped Preheat oven to 375ºF. Cook spinach in a skillet over medium heat. Season with salt and pepper. Once wilted, transfer to a cutting board and let cool. Chop the spinach. In a large mixing bowl, combine ground turkey, chopped spinach, breadcrumbs, egg, garlic, feta, mozzarella, salt and pepper. Scoop about 1 rounded tablespoon of the mixture to make 1 oz balls. Place in a greased baking dish. Bake for 20-25 minutes until browned and cooked through. 3/4 cup Greek yogurt Juice of 1/2 lemon 3 tbsp chopped fresh dill 1 tsp minced garlic Salt & pepper 1/2 medium cucumber, shredded In a bowl, combine the yogurt, lemon juice, dill, garlic, and cucumber.
