Preheat the oven to 185°C (fan) and line two baking trays with baking paper. 2. Sift the plain flour, bicarbonate of soda and salt into a bowl and whisk together. 3. In a separate bowl cut the butter into cubes and whisk until smooth. 4. Add the light brown sugar and granulated sugar together, then mix until a smooth paste. 5. Add the egg and vanilla extract, then mix until smooth. 6. Fold the dry ingredients into the wet mixture using a spatula until a soft dough forms. 7. Fold through the chopped white chocolate. 8. Cover the bowl and chill in the fridge for at least 30 minutes up to 1hour. 9. Divide the dough into 16 equal balls (around 60g each) and place them well spaced on the prepared trays. 10. Bake for 13–15 minutes, or until the edges are lightly golden. 11. Remove from the oven and gently press a few extra pieces of white chocolate into the tops while the cookies are still warm.
