katsu sando. crispy pork cutlet sandwiched between soft japanese milk bread. tried again making shokupan, japanese milk bread! the last time i felt the bread wasn’t as fluffy and soft as i wanted, this time it was. but the bread needed more height to it, so tiny bit more dough next time. i’ll get it right eventually😅 Ingredients— Japanese milk bread: 5g yeast 130ml milk 330g bread flour 45g granulated sugar 10g dry milk pinch of salt Tangzhong (20g bread flour + 100g water) medium egg (approx. 45g) 25g unsalted butter Tonkatsu: Salt and pepper 2x pork medallions batter mixture (2tbsp water + 5tbsp plain flour + 1 egg + dash of salt) Panko Oil Cabbage Butter Katsu sauce ~Note: i used a loaf tin with a lid and the bread didn’t fill the whole tin as i would’ve liked. but you can use this recipe without a lid, just brush the top with an egg wash for a golden brown shine. #katsusando #katsusandwich #tonkatsu #japanesesandwich #shokupan #japanesemilkbread #milkbread #bread #breadmaking #baking #bake #homebaking #homebaker #homebakes
