What if I wanna make 3 loaves of bread? But I only have one Dutch oven. Can I let the rest of the dough rest until my first one is done.

I usually let my dough rise for 2 hours and then put it in a container , I put it in the fridge overnight ,the next day I bake it , I find it kind of tast like sourdough taste than regular bread when I make it this way
