🥞 Oatmeal Pancakes Ingredients: * 2 cup rolled oats (blended) * 1 teaspoon baking soda * 1/4 cup protein powder of choice * 1 ripe banana, mashed * 1/2 cup unsweetened apple sauce * 1 cup vanilla almond milk * 1 egg * 1 teaspoon vanilla extract * Fresh berries for topping (optional) Directions: 1. In a blender, pulse the rolled oats until you have a flour-like consistency. 2. In a mixing bowl, combine the blended oats, baking soda, and protein powder. 3. In a separate bowl, whisk together the mashed banana, applesauce, almond milk, egg, and vanilla extract. 4. Pour the wet ingredients into the dry ingredients and stir until well combined. 5. Let the batter rest for a few minutes to thicken. 6. Heat a non-stick pan over medium heat. 7. use 1/4 cup to Spoon the batter onto the pan to form pancakes. 8. Cook until bubbles form on the surface, then flip and cook the other side until golden brown. 9. Repeat until all the batter is used. 10. Top with fresh berries if desired.
