Cottage Pie but make it loaded potato style 😍  Crispy golden potatoes piled with a rich beef filling, topped with melted cheese, parsley and crispy onions (I obviously make extra thick gravy to pour over too 🤣🤭) a perfect easy Sunday dinner that’s super comforting and cosy 💕  📚For more easy and tasty recipes check out my cookbook “Low-Cal Kitchen Bangers” links in my bio 🫶🏼 Ingredients (Serves 2): 500g maris piper potato peeled and cubed  1 tsp garlic granules  ½ tsp smoked paprika  ½ tsp dried parsley  1 carrot diced  1 white onion diced  2 celery sticks diced 
250g lean beef mince  1 tsp chopped garlic  1 tsp mixed herbs  ½ tsp dried thyme  Salt  Pepper  1 tbsp tomato puree  ½  tbsp worcestershire sauce  1 beef stock cube crumbled
1 heaped tbsp beef gravy granules (can also use cornflour) 200ml water  35g reduced fat cheddar grated  30g mozzarella grated  A couple of sprigs of fresh parsley chopped 1 tsp crispy onions  💕Toss the potatoes with garlic granules, paprika, parsley, salt, pepper, and a light spray of oil.

💕Air fry at 200 degrees celsius for 20 minutes, shaking halfway until golden and crispy. Alternatively, bake for 30-35 minutes at  220 conventional/200 fan.

💕Add diced carrot, onion, celery to a large frying pan. Fry until soft before adding in the beef mince. 💕Cook until browned before adding in the chopped garlic, mixed herbs, thyme along with salt and pepper to taste. Fry for a further minute, before adding in the tomato puree, worcestershire sauce, beef stock cube and gravy granules. 

💕Pour in the water and leave to thicken for a couple of minutes.  💕Serve the crispy potatoes with the cottage pie filling on top. Top equally with the cheese and mozzarella. 💕Pop under the grill for a couple of minutes to allow the cheese to melt. 💕Garnish with the fresh parsley and crispy onions.
