The Onion-Wrapped Flying Dutchman  A friend asked me why I hadn’t made this yet so here we are. It was actually pretty good, messy but good! Ingredients: Makes 2 Sauce 1/3 cup mayonnaise 1 gherkin finely chopped 3 tbsp ketchup 1 tbsp chilli vinegar 1 tbsp American mustard  Patties 4 beef patties 2 tbsp vegetable oil American mustard, for frying 2 American cheese slices salt and pepper Caramelised Onions 1 large onion cut into discs vegetable oil 2 American cheese slices Method: In a small mixing bowl, combine the mayonnaise, diced gherkins, ketchup, mustard, and brine from pickled chilli, along with a dash of salt and pepper. Set aside. In a large pan on a medium heat, pour in vegetable oil. Once the oil is hot, add the onions. Cook them for a few minutes until the edges begin to turn golden. Carefully flip them over to caramelise the other side. Before removing them from the pan, place a slice of cheese on half of the onions. Add a teaspoon of water to the pan and cover it for 20 seconds to allow the cheese to melt. In another pan over medium-high heat, add vegetable oil. Place the patties in the pan, use a smash burger press or a bottom of a pan and greaseproof paper to flatten the patties, spread a teaspoon of mustard evenly on the raw side, then sprinkle with salt and pepper. Let the patties cook for approximately 2-3 minutes until they develop a golden-brown crust. Flip them over and place a slice of American cheese on top of half of the patties. Add a teaspoon of water to the pan and cover it for 20 seconds to melt the cheese. Allow them to cook for about 1 more minute. The base is the onion without cheese, a little sauce then the patty with cheese, then the patty without and then the onion with cheese but flip it so the cheese is on the inside of the burger.
