Always prep like an assembly line. Peel all, then cut all. Always keep one motion going til it’s done. You get faster at the one and you’re not wasting time switching back and forth

I'm not in the industry anymore but I will never buy pearl onions except the frozen preped ones ever again because of this practice.

If you soak them briefly in ice water and then cut of the tops and bottoms (carefully so as to not trim too much) then put them in a bucket with a couple of cloths. Shake them up and you’re done

perks of small expensive portions. your prep is so small. the idea of having time to vacuumbag small portions of onions is impossible in normal settings

Best way I found was using a paring knife cut the top nearly all the way through and then peel down and you’ll get to trim and peel in one motion

Brother listen: cut trim ends off and soak them in water for 20 minutes. The skins will peel much easier

john :
if u cut the root end off u can just squeeze it out by pressing the other end and it should slide out of the exterior skin

Idk if it works for pearl onions but for garlic if you put them into a bowl and put another bowl on top and shake hard for awhile all the peels come off
