@sarahsveganrecipes: HERBY TOFU SANDWICH 🍃 Recipe makes 1 sandwich For the olive tapanade: 50 g pitted kalamate olives 1 teaspoon extra-virgin olive oil For the tofu: 1/2 280g block of extra firm tofu, drained 1 tbsp extra-virgin olive oil 2 tbsp red wine vinegar 1 tsp Dijon mustard 1/2 tsp salt 1/2 tsp garlic granules 1 tsp oregano For the coriander hummus: 75g hummus 15g coriander 1 tsp lemon juice 1 roll or baguette, sliced and lightly toasted Handful of rocket 2 slices of roasted red pepper Pink pickled onions Chilli flakes Add all of the marinade ingredients to a shallow container and mix well to combine. Cut the tofu into slices about 1/2 cm thick. Add the slices to the marinade and coat well. Leave to marinate for as long as you can. Meanwhile, make sure the tapenade by blending the olives with the olive oil. Blend the hummus with the lemon juice and coriander. Cook the tofu on a griddle pan or oven bake at 200°C until golden. Brush with a little more marinade. Assemble your sandwich with the tapenade, rocket, tofu, hummus, pepper, onions and chilli flakes. Enjoy! 💛 #sandwich #sandwiches #vegan #veganfood #lunchideas
