Kaymak kuymağı is one of the best breakfast dishes you can have, and the crispy bottom of it is a special treat for those who know about it🥰 It is not the kuymak most people know about. This one is made with kaymak (clotted cream) that comes from yayla (uplands) of the Black Sea region. That kaymak is top tier and impossible to find at the local markets, you have to know someone that produces it. Kaymak is then melted and corn flour is added with some salt. You constantly need to stir the kuymak while it’s being cooked to mix kaymak and corn flour well. You can add melted cheese such as Kolot or Telli if you want to make it stretchy, but my family prefers it only with kaymak, corn flour and salt. After it thickens and boils you can stop stirring and turn down the heat to cook it for 15 more minutes to form a crisp bottom.
