Sweet Potato Beef Fajita Bowl 621 calories per bowl 60g carbs | 20g fat | 46g protein Find more easy, healthy but delicious recipes in my cookbook linked in my bio Ingredients 250g sweet potato 1 tsp paprika & onion seasoning A pinch of salt Spray oil 170g 5% beef mince 1/2 tbsp fajita seasoning 50g 0% fat Greek yoghurt 50g avocado sliced or mashed 50g salsa Squeeze of lime Fresh coriander Method
Chop sweet potato into 1–2cm cubes and add them to a large bowl. Microwave for 5-6 minutes on high to soften.
Once they’re done in the microwave, spray with the oil and toss in the seasoning and the salt, then air fry at 190°C for 10-15 minutes until crispy. While it’s cooking, heat a pan over medium-high heat and add a spray of oil. Add the beef mince and the fajita seasoning and cook for around 5 minutes until browned. Add to a bowl along with the avocado (sliced or mashed), salsa and yoghurt. Finish with a squeeze of lime.
