Here we have a dark chocolate mousse cake with a raspberry filling and white chocolate cremeux. The base is praline crunch with chocolate and candied hazelnuts. Finished with a dark chocolate glaze, chocolate rose, and sugar dome. Visuals 6/10 Taste 8/10 Notes: So basically I saw this done in parts by Amaury Guichon for the full piece and Frank Haasnoot more specifically for the flower and I wanted to try it. In the process, I had a lot of challenges and mistakes where I missed certain executions. The tempered chocolate shell was a bit short, ran out of isomalt after the 15th attempt and then resorted to sugar for the dome (which ended up being too wet as you can see). Also worked with plastic chocolate that was new as well. So all in all, not bad but I think I can do better and will revisit this in another form.
