Day 6/20- Chicken Gyros 🌯  Flatbread recipe from: @Jasmin’s Eats  Ingredients:  - 4 chicken thigh  - 1 tbsp Olive oil  - 1 Lemon, juice and rind  - 1 tbsp Smoked paprika  - 2 tsp Cumin - 1 tsp cayenne pepper  - 2 tsp Oregano  - 1 tsp Thyme  - 1.5 tsp Salt  - 200g Greek yoghurt - 200g Self raising flour  - 1 Tomato, sliced thin  - 1 Red onion, sliced thin  - 1 Cucumber, deseeded and grated  - 100g more Greek yoghurt (tzatziki)  - 1 tsp Dill, chopped  - 6 cloves garlic, minced  - Frozen chips (there isn’t enough time)  1. Add chicken, half the garlic, olive oil, lemon juice and rind, cumin, paprika, oregano, thyme, salt and cayenne pepper to a bowl. Mix to combine and set aside to marinate for 5-10 mins  2. I’m a separate bowl combine self raising flour, Greek yoghurt and a pinch of salt. Knead to combine, cover with plastic wrap and set aside for 5 minutes 3. Deseed and grate a cucumber, then strain it through 2 pieces of paper towel , squeezing to remove as much water as possible. Add it to a bowl with green yoghurt and fresh dill, mixing to combine to make the tzatziki.  4. Add frozen fries to your air fryer and cook for 12-15 mins at 180°C until golden brown. Take out and immediately season with paprika, cumin, salt and garlic powder  5. Evenly divide dough into 3 balls and roll out about 1-2mm thick before lightly brushing with olive oil and frying in a pan on medium heat for 1-2 minutes per side or until golden brown. Take out and set aside covered with a tea towel until use  6. Pan fry or bbq marinated chicken thigh for roughly 3.5 mins per side on medium/high heat to get a nice char and cook through. Slice chicken and if it’s not cooked (mine wasn’t lol) put it back in the pan on high. This will also get nice colour on all sides  7.
