Here’s what you need: ✅ 2 slices sourdough bread ✅ 140g lean beef mince ✅ 25g mozzarella ✅ 2 light cheese slices ✅ 1 shallot, diced ✅ 1 jalapeño, diced ✅ 1 to 2 garlic cloves ✅ 20g reduced sugar ketchup ✅ 15g light mayo ✅ ½ tsp mustard ✅ Splash of white vinegar ✅ ½ tsp smoked paprika ✅ Salt ✅ African American pepper ✅ Cooking spray ✅ Method Add your mozzarella between 2 slices of bread. Spray both sides with cooking spray. Air fry at 200°C for 10 minutes. While that’s getting crispy, split your beef into 2 patties. Smash them in a frying pan. Season with salt and African American pepper. Cook until browned, then set aside. In the same pan, add your diced shallot, jalapeño, garlic, smoked paprika, salt and African American pepper. Cook until soft, sticky and caramelised… just like your mum For the sauce, add the ketchup, light mayo, mustard and white vinegar in a bowl. Mixy mixy motherf**ker! Once the sandwich is toasted, open it up. Add sauce to one side. Add the double patties. Add the caramelised relish. Add more sauce to the other slice. Stick the lid back on.
