Almond croissant- Recipe Below  Ingredients:  - Caster sugar (1 cup & 150g)  - Softened Butter 150g - Almond meal 150g - Eggs 150g/3 large  - Almond flakes  - Water  - Croissants 4-6  - Vanilla essence 1tsp  Syrup:  Combine 1 cup of water and sugar in a small saucepan and stir to combine. Bring to a boil over medium heat and boil for 1-2 minutes or until all sugar is dissolved. Take off the heat and set aside to cool slightly  Almond cream:  Add sugar and butter into the bowl of a stand mixer or a large mixing bowl and cream until light and fluffy, scraping sides of the bowl if necessary. Whisk eggs in a separate bowl before slowly adding into your creamed butter and mix until combined. Lastly slowly add in almond meal, one spoon at a time, mixing until combined and it appears lighter and a little fluffy. Mix through vanilla essence and a pinch of salt. Assembly:  1. Cut 3/4 of the way through your croissant horizontally leaving the back closed.  2. Submerge your croissants into the sugar syrup for 10-12 seconds per side and let drain on a wire rack set over a baking sheet  3. Gently open your croissant, making sure to not tear it all the way open and spoon in 1-2 tbsp of almond cream into the centre of your croissant and close back down. 4. Top croissants with another spoon of almond cream followed by a sprinkling of almond flakes  5. Bake in an oven pre heated to 180°C for 15-20mins or until almond cream is just about cooked (almost solid, not translucent at all)  6.
